Sweet Sicilian Pasta Salad

Serves 6-8

12 oz. rotini pasta, uncooked

1/2 C diced fresh mushrooms

1/2 C diced red pepper

1/2 C sliced, pitted black olives

1/4 C diced red onion

1 stalk celery, diced

1 tsp celery salt

3/4 tsp garlic salt

1/2 tsp coarse black pepper

1 C Caniglia's Sweet Sicilian Dressing (regular or lite)

Cook rotini pasta, drain and rinse. Combine pasta in large bowl with mushrooms, red peppers,  black olives, onions and celery. Season with celery salt, garlic salt and pepper. Mix well, then stir in the Sweet Sicilian Dressing.

Sweet Sicilian Broccoli Noodle Salad

Serves 6-8

2 1/2 C broccoli florets

1 stalk celery, diced

1/4 C red onion, chopped

1 pkg Ramen noodles, crushed

1 C Caniglia's Sweet Sicilian Dressing (regular or lite)

1/4 C sunflower seeds

In a large bowl, combine the uncooked ramen noodles, broccoli, celery and onion. Discard seasoning packet from the ramen noodle package. Pour the Sweet Sicilian Dressing over the vegetables and noodles. Sprinkle sunflower seeds on top. Cover and refrigerate the salad for at least 12 hours, stirring occasionally so the noodles absorb the dressing. 

Bean and Tomato Salad

Serves 6-8

2 C (8 oz) fresh green beans, cut into 1 inch pieces, cooked in boiling water 5 minutes, drained and rinsed in cold water

3 large tomatoes, peeled and coarsely chopped
1 C thinly sliced red onion
1/2 C (2 oz) crumbled feta cheese
15 oz can chickpeas (garbanzo beans) drained and rinsed

1/3 C (or more) Caniglia's Sweet Sicilian Salad dressing


Mix all together and add the dressing. Can be made a few hours ahead, keeps well.
